Cut and Come Again Cake

Ingredients

8 oz self raising flour
1/4 tsp salt
4 oz marge
4 oz sugar
1/2 tsp mixed spice
6 oz dried fruit mixture
1 oz mixed peel
2 eggs
1-2 tbsp milk

Method

1. Sift the flour and salt and rub in the fat.

2. Add the sugar, spice dried fruit and mixed peel. Beat the eggs and add with the milk.

3. Put into a lined deep tin (6 dia). Bake for 1.1/2 hours at 350F or gas 3. Or in bake in a shallow greased and floured tin for about 30-40 minutes at a slightly higher temperature.
