Chocolate Rum and Raisin Loaf

I have a copy of The Australian Women’s Weekly Quick Mix Cakes which has some fantastic recipes in it.  I don’t like to drink rum but I love it as an additive to cakes etc and I do love rum and raisin ice-cream, so I had to have a try of this recipe. (recipe is on the recipe pages).

I soaked the raisins in the rum for 2 hours before starting to make the cake.  It was so easy to make – literally a case of combining all the ingredients into the mixing bowl, mixing and it was done!  The mixture was poured into a loaf tin and baked for 45 minutes.

When you first smell the cake you can only smell the chocolate but as soon as you cut into it – wow! – the rum smell escapes.  The inside of the cake is so moist and it tastes delicious, the rum is not too overpowering and combines well with the raisins and chocolate.  A clear winner with me!!
