I thought I’d have a go at making a Rainbow Cake this morning. I found a recipe that was meant to be six layers but as I only had four baking tins the same size I improvised with the four instead.
It was a basic vanilla Victoria sponge mixture, divided into four and the different colours added. The layers were cooked for 20 minutes. When cooled I sandwiched them together with a cream cheese frosting and the same frosting used on the top and sides. Yum!!
