Cinnamon Pretzels

This weeks challenge was to make cinnamon pretzels. I was looking forward to this challenge as I love, love, love cinnamon!

First off I mixed the yeast with warm water and left for about 10 minutes to froth up.

I weighed out the flour (strong white flour) and added salt and caster sugar.
I made a well in the dry ingredients and added the yeast mixture. Using the dough hook I mixed the dough in the mixer. When mixed I kneaded the dough for about 5 minutes so it was smooth.

I oiled a large bowl and added the ball of dough and covered with cling film. I left this for an hour to double in size.

I then divided the dough into 12 equal chunks.

Then each chunk was rolled into a long rope. Each rope was made into a pretzel shape.


I mixed bicarbonate of soda with warm water and each pretzel was dunked in the water and placed into a baking tray. I baked them for about 10 minutes. Whilst still warm I brushed them with a sugar and water mix and then sprinkled cinnamon sugar over the top. Beautiful!!
